'Noble Rot' - essential for cool climate sticky dessert wines Noble Rot is a fungus which best occurs in cold
conditions such as those experienced by the Snowy River Winery's vineyards. The fungus
creates microscopic holes in the skin, allowing some of the moisture to
escape. This dehydration of the fruit, concentrates the sugar and flavour
- vital ingredients to a good sticky desert wine. Our 2001 crop was a dream crop for sticky dessert wines with our entry taking out the gold medal at the 2001 Cool Climate Wine Show held in Murrumbateman. This award-winning wine is now available from our Snowy River Winery in Berridale. Through the long slow ripening, cool climate
white wines give you more flavour and cellar well. We specialise in
semi-dry fruity wines. |
